Easy Cheesy Loaded Potatoes

Looking for something easy and filling for dinner? Try these loaded potatoes! Customize them with your family's favorite toppings for extra goodness! Perfect to dress up leftover baked potatoes from dinner the day before.

Ingredients

Directions

1.  Rinse potatoes and stab with a fork around each potato to make small holes for ventilation. Place on a microwave-safe plate and microwave on high for 5 minutes. Turn potatoes over and microwave on high another 5 minutes.

**Alternatively, bake potatoes in an oven set at 425 degrees F for 45 minutes or over the grill (wrapped in foil) for 45 minutes.

2. Remove finished potatoes from heat and let cool.

3. Bring a small pot of water to boil over stove-top with a steam basket inside.

4. Clean and chop broccoli and set into the steaming basket in the pot of water.

5. Cook broccoli until vibrant green and fork just pierces it. Remove from water.

6. Halve the baked potatoes and arrange on a microwave plate (or pan if you're using the stove). Spread butter across the halves.

7. Cut up ham sandwich slices/steaks (or cook up some bacon and use that instead) and top potatoes with them.

7. Add broccoli to the top of the potatoes and ham, then dress with cheese.

8. Microwave for 2-4 minutes on high until cheese is melted.

9. Serve and enjoy! Top with whatever additions you like - sour cream, chives, whatever you like!
