Simple Almond Crusted Cod

Fast, low cost, healthy and tasty! It's hard to go wrong with this one! Around the holidays we try to eat extra healthy before and after the big feasts! Give this one a try between your stuff yourself silly meals. Another scaled up alternative would be Pecan Crusted Halibut!

Ingredients
- (4) Cod Portion - Wild Caught Alaska
- (2 tbs) Coconut oil
- Salt and pepper to taste
- (2 eggs) Dozen Large Eggs
- (2 1/2 cups) Finely chopped almonds
- Juice of 1 lemon
- Fresh Chives or green onion (optional)
Directions
Preheat oven to 375 degrees F. Grease baking dish with coconut oil.
Add desired amount of salt & pepper to Cod portions. Beat the two eggs in a separate bowl.
Dredge cod portions in egg first then coat with finely chopped almonds. Place in baking dish.
Bake for 15minutes until fish flakes easily with a fork.
Plate cod portions and squeeze lemon juice over them and add chives for garnish.
*If you do not thaw your cod ahead of time the bake time is roughly doubled. Keep and eye on it and test at the thickest part of one of the portions to check doneness.
