Sweet and Spicy Salmon

Directions
Ingredients:
4 portions wild caught Alaska salmon. I used Coho.
2 T olive oil
3/4 t sea salt
ground pepper to taste
3 T Pear with Honey and Ginger preserves
1/2 t dried, ground Cayenne Pepper. More or less depending on how spicy you want it.
1/2 cup fresh mixed green herbs finely chopped (parsley, thyme, mint, dill or any combo make a good mix). Or sub 1/8 cup dried herbs.
Instructions:
Preheat oven to 425F. Line a rimmed baking sheet with parchment paper.
Place frozen salmon on the baking sheet and drizzle with olive oil. Rub to coat. Sprinkle salmon with salt and pepper
In a small bowl combine preserves and cayenne. Spread evenly on 4 portions of salmon. Press the herb mix evenly on top of preserve mix.
Roast salmon for 16-20 minutes or until the fish is flaky when poked with a knife. Check thickest section of the portions. Don't overcook, pink but warm in the center is desirable.
