Unstuffed Cabbage Skillet

Ingredients
- (1 lb) Ground Pork
- (1 large) apple
- (1 large) onion
- (1/2 head) green cabbage
- (2 cloves) garlic
- (1 small) green bell pepper
- salt
- pepper
- (1/2 tsp) garlic powder
- (1/2 tsp) ground ginger
- (1 medium) carrot
Directions
Prep:
1.Thaw the pork ahead of time in the refrigerator. Can substitute with bulk breakfast sausage instead of ground pork.
2. Dice the apple, onion, garlic, carrots (or grate instead), and bell pepper. Shred the cabbage into small slivers. Keep separate until cooking.
Cook:
3. Saute the ground pork in a pan.
4. When the ground pork is just cooked, add the carrots to the skillet and stir.
5. After 2 minutes, add the onion, bell pepper, and garlic to the skillet.
6. Saute together briefly, then add apple and cabbage.
7. Season with a bit of salt and pepper, ginger and garlic to taste. You can add a pre-mixed vegetable seasoning or soy sauce if you like.
8. Cook until apples are soft and cabbage is bright, then serve!
Serves well with cheese on a crunchy tortilla.
We usually feed 6 when we make this dish (and love a little bit of leftovers), so we use 2 pounds of pork and double the rest of the recipe.
