Simple Chicken Salad

Perfect for picnics, light lunches, and quick dinners, try this super simple, yet super delicious (and nutritious) chicken salad for a fresh, vibrant meal on a hot summer day. Just 15 minutes and a few ingredients is all it takes. It's a great way to use leftover chicken and feed your family good food, fast (or make an easy lunch for yourself, too)!

Ingredients

  • (2 cups pulled) Whole Chicken
  • (1/2 cup) Mayonnaise
  • (2) Celery stalks, diced
  • (1) Green onion, diced
  • (1 tsp) Dijon mustard
  • (1/2 tsp) Garlic powder
  • Salt and pepper to taste
  • Crasins, cashews, or pecans, if desired

Directions

  1. Cook whole chicken ahead of time and have meat pulled and cooled.
  2. Combine mayo, mustard, garlic powder, salt, and pepper in a small mixing bowl.
  3. Combine chicken, celery, and onion in a large mixing bowl. Add mayonnaise mixture and stir until evenly coated.
  4. Add craisins, cashews or pecans, if desired and stir until combined.
  5. Serve chilled on its own, in a wrap, or on a sandwich! Keep refrigerated.
