Simple Chicken Salad

Perfect for picnics, light lunches, and quick dinners, try this super simple, yet super delicious (and nutritious) chicken salad for a fresh, vibrant meal on a hot summer day.
Just 15 minutes and a few ingredients is all it takes. It's a great way to use leftover chicken and feed your family good food, fast (or make an easy lunch for yourself, too)!

Ingredients
- (2 cups pulled) Whole Chicken
- (1/2 cup) Mayonnaise
- (2) Celery stalks, diced
- (1) Green onion, diced
- (1 tsp) Dijon mustard
- (1/2 tsp) Garlic powder
- Salt and pepper to taste
- Crasins, cashews, or pecans, if desired
Directions
- Cook whole chicken ahead of time and have meat pulled and cooled.
- Combine mayo, mustard, garlic powder, salt, and pepper in a small mixing bowl.
- Combine chicken, celery, and onion in a large mixing bowl. Add mayonnaise mixture and stir until evenly coated.
- Add craisins, cashews or pecans, if desired and stir until combined.
- Serve chilled on its own, in a wrap, or on a sandwich! Keep refrigerated.
