Orange Ginger Chicken Freezer Meal

Ingredients
- (2 Packages/3 Pounds) Chicken Breast - Boneless, Skinless
- (1 cup) Orange Juice
- (3 Tbsp/3 inches) Ginger Root
- (6 Tbsp) Honey
- (6 Tbsp) Coconut Oil
- (3 tsp) Crushed Red Pepper Flakes
Directions
We prepared 2 packages of chicken breasts for a total of about 3 pounds of boneless, skinless chicken breasts to make 3 freezer meals of this recipe.
Thaw chicken breasts in the fridge before prepping this meal so they can be easily and safely cut.
We used quart freezer bags to store this recipe.
*Note - this recipe does not yield a thick, sweet sauce as one may be accustomed to in other orange ginger chicken recipes. This recipe is more of a marinade that results in very tender, flavorful chicken. If you and your family prefer a thick, sweet, sticky sauce, this is not the recipe for you.
How to Prep
1.Use a sharpie to mark your freezer bags "Orange Ginger Chicken" with the date you prepared it on.
2. Next, dice the chicken breasts into small 1 - 2 inch chunks and evenly distribute throughout the 3 freezer bags so there is roughly 1 pound of chicken in each.
3. Add all other ingredients to each individual bag in the portions listed below:
- 1/3 cup orange juice (freshly squeezed or store bought)
- 1 inch/1 Tbsp peeled ginger root (or 1/4 tsp ground ginger)
- 2 Tbsp Honey
- 2 Tbsp coconut Oil
- 1 tsp crushed red pepper flakes
4. Press as much air out of the bags as you can, seal tight, and lay flat in the freezer.
Cooking
When you want to cook the chicken, remove the bag from the freezer to thaw in the fridge overnight.
Then, dump the contents of the bag into a frying pan or skillet over medium heat. Cook chicken is cooked through to at least 165 degrees F, roughly 15-20 minutes.
Serve as your favorite stir fry alongside any other veggies or rice you'd like!
Prepare vegetables and rice in different pans. Saute the vegetables in coconut oil (or other preferred cooking oil) and combine with chicken after all are finished cooking, or leave all 3 components separate to allow for a "build your own bowl" dinner.
