Goat Cheese Stuffed Lamb Burgers

Ingredients

  • (1 pound) Ground Lamb
  • (1 tsp) coarse salt (less if using table salt)
  • (1 tsp) garlic powder
  • (1 tsp) dried oregano
  • (2 ounces) soft log-style goat cheese

Directions

Combine the ground lamb, salt, garlic powder, and oregano.

Divide mixture into 8 pieces.

Cut 2 ounces of cold soft log-style goat cheese into 4 rounds (about 1/4" each). These don't need to be perfect - if it crumbles, it's ok.

In the palm of your hand, flatten 1 piece of lamb mixture into a mini patty about 3" wide. 

Place a disc of the cheese in the center. Make another mini meat patty and place on top. 

Pinch the edges to seal well, then smooth the whole thing to form a nice patty.

Grill or pan fry to desired doneness, being careful not to overcook - if cooked too long, the cheese may begin to ooze out!
