Skirt and flank steak are similar, but are not to be confused with each other. Cut from the plate, beef skirt is long and flat, and prized for its flavor. Coming from the diaphragm, skirt is a tougher cut, best served medium or medium rare and sliced thinly. They are often used in fajita recipes.
