The lamb comes from hair breed sheep that have been bred for the quality of their meat, which is tender, mild, and pleasing in flavor.

Lamb shanks are best when braised or cooked low and slow to ensure a tender result. Shanks are stronger in flavor than other lamb cuts like ground lamb or lamb stew.
